Beef and Vegetable Soup

Ingredients

  • 500g stewing beef, diced
  • 1 tablespoon olive oil

  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, cubed
  • 1 cup butternut, cubed
  • 1 tin chopped tomatoes (400g)
  • 1.5 litres beef stock
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • Fresh parsley, chopped

Method

Step 1

Heat the olive oil in a large soup pot.

Add the beef and brown on all sides.

Remove and set aside.

Step 2

Add the onion and cook for 5 minutes until softened.

Stir in the garlic and cook for 1 minute.

Step 3

Return the beef to the pot.

Add the carrots, celery, potatoes and butternut.

Step 4

Pour in the chopped tomatoes and beef stock.

Add the thyme and bay leaf.

Bring to a boil.

Step 5

Reduce the heat and simmer gently for 1 hour and 15 minutes until the beef is tender.

Step 6

Stir in the peas.

Cook for a further 10 minutes.

Season with salt and pepper.

Remove the bay leaf.

Step 7

Ladle into bowls and garnish with fresh parsley.
