- 1/2 cup unsweetened almond milk (or any plant-based milk)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Pinch of salt and black pepper
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 2 tablespoons vegan butter, melted
For the Vegan Blue Cheese Dressing
- 1/2 cup vegan mayonnaise
- 2 tablespoons unsweetened almond milk
- 1 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 2 tablespoons crumbled vegan blue cheese (or substitute with finely crumbled tofu for texture)
- Salt and black pepper, to taste
For the Wraps
- 4 large tortillas (flour or gluten-free)
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup sliced red onion
- 1/2 avocado, sliced
Instructions
Prepare the Buffalo Cauliflower
Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper. In a large bowl, whisk together the flour, almond milk, garlic powder, smoked paprika, salt, and black pepper to form a smooth batter. Dip the cauliflower florets into the batter, ensuring they are well-coated. Arrange the florets on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through.
In a small bowl, whisk together the hot sauce and melted vegan butter. After 20 minutes, remove the cauliflower from the oven and brush it generously with the buffalo sauce. Return to the oven and bake for an additional 10 minutes, or until crispy and golden.
Make the Vegan Blue Cheese Dressing
In a small bowl, whisk together the vegan mayonnaise, almond milk, lemon juice, garlic powder, and crumbled vegan blue cheese. Season with salt and pepper to taste. Refrigerate until ready to use.
Assemble the Wraps
Warm the tortillas in a dry skillet or microwave to make them pliable. Place a layer of shredded lettuce on each tortilla, followed by the diced tomatoes, sliced red onion, and avocado. Add a generous amount of the crispy buffalo cauliflower to each wrap. Drizzle with the vegan blue cheese dressing.
Wrap and Serve
Fold the sides of the tortilla inward, then roll tightly to create a wrap. Cut each wrap in half for easy serving. Serve immediately with extra blue cheese dressing or hot sauce on the side.
