Serves: 4

INGREDIENTS

  • 1/2Ā cup teriyaki sauce
  • Ā 1/3Ā cup rice vinegar
  • 1 tbsp finely grated fresh ginger
  • 1 Ā½ cups brown rice
  • 2 tins (340 g) tuna in springwater, drained
  • 1 Mediterranean cucumber,Ā Ā halved lengthways, slicedĀ Ā thinly lengthways
  • 1 large avocado, thinly sliced
  • 1 carrot, cut into matchsticks
  • 1/3 cup drained pickled ginger,Ā Ā  thinly sliced
  • 1 tbsp sesame seeds, toasted
  • Ā½ sheet toasted seaweed (nori),Ā Ā  finely sliced

METHOD

DRESSINGĀ combine teriyaki sauce, vinegar and ginger in a small bowl.

COOKĀ rice according to the instructions on the packet.

COMBINEĀ warm rice and half the dressing in a bowl.

DIVIDEĀ rice between four bowls andĀ top with tuna, cucumber, avocado, carrot and pickled ginger. DrizzleĀ with remaining dressing. SprinkleĀ with sesame seeds and seaweed.

Top tip:Ā For a pop of creamy flavour, serve tuna bowl with a dollop of Japanese mayo ā€“ these are found at Asian supermarkets and some grocery stores
