Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons mild curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and cubed
  • 300g butternut, cubed
  • 1 red pepper, chopped
  • 400g tin chopped tomatoes
  • 400ml coconut milk
  • 500ml vegetable stock
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Fresh coriander for serving

Method

Step 1

Heat the oil in a large pot over medium heat.

Add the onion and cook for 5 minutes until softened.

Stir in the garlic and ginger and cook for 1 minute.

Step 2

Add the curry powder, cumin and turmeric.

Cook for 30 seconds until fragrant.

Step 3

Add the carrots, potatoes, butternut and red pepper.

Stir well to coat the vegetables in the spices.

Step 4

Pour in the chopped tomatoes, coconut milk and vegetable stock.

Bring to a gentle simmer.

Step 5

Cover and cook for 25 minutes, stirring occasionally, until the vegetables are tender.

Step 6

Stir in the peas and cook for a further 5 minutes.

Season with salt and pepper to taste.

Step 7

Serve topped with fresh coriander.

Chickpea Curry

Add a drained tin of chickpeas for extra protein.

Replace the potatoes with sweet potatoes for a sweeter flavour.
