  • 1 onion, finely diced
  • 2 cloves garlic, crushed
  • 500g chicken breast, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 500ml chicken stock
  • 125ml fresh cream
  • 1 teaspoon dried mixed herbs
  • Salt and black pepper to taste

Topping

  • 1 sheet ready-rolled puff pastry
  • 1 egg, beaten

Method

Step 1

Preheat the oven to 200°C.

Lightly grease a pie dish or ovenproof baking dish.

Step 2

Heat the olive oil in a large frying pan.

Cook the onion for 5 minutes until softened.

Add the garlic and cook for 1 minute.

Step 3

Add the chicken and cook for 5 to 6 minutes until lightly browned.

Stir in the carrots and peas.

Step 4

Add the butter and allow it to melt.

Stir in the flour and cook for 1 minute.

Gradually pour in the chicken stock while stirring continuously.

Step 5

Add the cream and mixed herbs.

Simmer for 10 minutes until the sauce thickens.

Season with salt and pepper.

Allow the filling to cool slightly.

Step 6

Transfer the filling to the prepared baking dish.

Lay the puff pastry over the top.

Trim any excess pastry and press the edges down gently.

Cut a few small slits in the centre to allow steam to escape.

Step 7

Brush the pastry with beaten egg.

Bake for 25 to 30 minutes until golden brown and crisp.

Step 8

Allow the pie to rest for 5 minutes before serving.

Variations

  • Add mushrooms for extra flavour.
  • Use leftover roast chicken.
  • Add sweetcorn for a sweeter filling.
  • Replace cream with cream cheese for a richer sauce.

Tips

  • Cool the filling before adding the pastry to prevent a soggy top.
  • Place the pie dish on a baking tray to catch any spills.
  • For individual pies, divide the filling between ramekins.
  • Serve with a simple green salad or steamed vegetables.

Conclusion

This easy chicken pie with puff pastry delivers everything you want from a comfort meal: a creamy filling, tender chicken and a buttery golden topping. It's simple enough for a weeknight dinner yet impressive enough to serve when friends or family visit.
