French Onion Honeycomb Pasta Recipe

Ingredients:

  • 1 pound of pasta
  • 1 tablespoon olive oil
  • 4 medium onions, thinly sliced
  • 1 tablespoon of butter
  • 1 tablespoon of honey
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 cup of vegetable broth
  • 1 cup of grated Gruyere cheese
  • 1/2 cup of grated Parmesan cheese

Directions:

  1. Preheat th3 oven to 200C/180C. Grease a 23cm springform cake pan and line the base with baking paper.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. Drain well and spread over a large tray to dry slightly. Arrange upright in the prepared pan to form a tight honeycomb pattern.
  4. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté for about 10-15 minutes until they become golden brown and caramelized.
  5. Add butter, honey, salt, pepper, and dried thyme to the skillet with the onions. Cook for another 5 minutes, stirring occasionally.
  6. Pour vegetable broth into the skillet and bring it to a simmer. Let it cook for another 5 minutes.
  7. Pour mixture over the rigatoni. Scatter with cheese.
  8. Sprinkle Gruyere cheese and Parmesan cheese over the top of the pasta and cover with a lid. Let it cook for about 25 minutes until the cheese is melted and bubbly.
