Tuna Cannelloni with Bechamel Sauce

Preparation

1. Put the cinnamon in boiling water, with a touch of salt and olive oil. Leave them in the water until they soften.
2. In a saucepan, mix the milk, cream and cheese over low heat and let it thicken. Remove from heat, then add the egg yolks let it thicken. Season with salt and pepper.
3. In a frying pan with oil sauté the onion, the pepper, the chilies. Add the tuna and the tomato. Cook and reduce for 5 minutes and season. Remove from heat and let cool and add parsley.
4. Fill the cannelloni and place them in a greased mold. Smother them with the sauce, and to put grated cheese and basil on top.
5. Bake at 175°C (347°F) until the cheese is browned.
