Instructions

Prepare the Avocado Spread

Mash the avocado in a small bowl. Add the lemon juice, a pinch of salt, and black pepper. Mix until creamy but still slightly chunky. Set aside.

Poach the Eggs

Fill a medium saucepan with water and bring it to a gentle simmer. Add 1 tablespoon of white vinegar to the water to help the eggs hold their shape. Crack one egg into a small bowl or ramekin. Carefully slide the egg into the simmering water. Repeat with the second egg. Cook for 3–4 minutes, or until the whites are set but the yolk is still runny.
