Ingredients
For the Crispy Chickpeas
- 1 can (400g) chickpeas, drained, rinsed, and patted dry
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder (optional, for spice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Tahini Dip
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic, finely minced
- 2 tablespoons water (or more, to thin)
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin (optional, for added flavour)
Instructions
Prepare the Chickpeas
Preheat your oven to 200°C (400°F). Spread the chickpeas on a clean kitchen towel or paper towel and pat them dry thoroughly. The drier the chickpeas, the crispier they’ll be.
Season the Chickpeas
Transfer the chickpeas to a bowl and toss with olive oil, smoked paprika, garlic powder, ground cumin, chili powder (if using), salt, and black pepper. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast the Chickpeas
Roast in the preheated oven for 25–30 minutes, shaking the pan halfway through to ensure even cooking. The chickpeas are ready when they are golden and crispy.
Make the Tahini Dip
In a small bowl, whisk together tahini, lemon juice, minced garlic, salt, and ground cumin (if using). Gradually add water, one tablespoon at a time, until the dip reaches your desired consistency. Taste and adjust seasoning if needed.
Serve
Place the crispy chickpeas in a serving bowl and pair with the tahini dip on the side. Garnish with fresh parsley or a sprinkle of paprika for presentation.
Tips for Perfect Crispy Chickpeas
- Dry thoroughly: Removing as much moisture as possible is key to achieving maximum crispiness.
- Season after roasting: For even more intense flavour, add a second layer of seasoning immediately after roasting.
- Experiment with flavours: Try other spice combinations like curry powder, za’atar, or Italian herbs.
- Storage: Store leftover chickpeas in an airtight container at room temperature for up to 2 days. Reheat briefly in the oven to restore crispiness.
