Avocado Deviled Eggs
These Avocado Deviled Eggs are a fresh, creamy twist on the classic appetiser. By replacing some of the mayo with creamy avocado, this dish becomes even more delicious and nutritious. Perfect for parties, snacks, or even as a quick lunch option.
Ingredients
- 6 large eggs
- 1 ripe avocado, peeled and pitted
- 2 tablespoons mayonnaise (or Greek yoghurt for a lighter option)
- 1 teaspoon Dijon mustard
- 1 teaspoon lime or lemon juice
- Salt and black pepper, to taste
- Pinch of paprika (optional, for garnish)
- Chopped fresh chives or parsley, for garnish
Optional Add-Ins
- 1 small clove garlic, minced
- Pinch of chilli flakes for heat
- Diced jalapeño for a spicy kick
Instructions
Boil the Eggs
Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove the pan from the heat, cover it, and let the eggs sit for 10–12 minutes. Drain the hot water and transfer the eggs to an ice bath to cool completely. Peel the eggs once cooled.
Prepare the Filling
Cut the peeled eggs in half lengthwise. Carefully scoop out the yolks and place them in a mixing bowl. Add the avocado, mayonnaise, Dijon mustard, lime or lemon juice, salt, and pepper. Mash and mix the ingredients together until smooth and creamy. Adjust seasoning to taste.
Fill the Egg Whites
Spoon or pipe the avocado mixture back into the hollowed-out egg whites. A piping bag or a resealable bag with the corner cut off can make this step neat and easy.
Garnish
Sprinkle the filled eggs with paprika, fresh chives, or parsley. Add optional toppings like chilli flakes or jalapeño slices if desired.
Serve
Arrange the deviled eggs on a platter and serve immediately. If making ahead, cover and refrigerate for up to 4 hours, but note that the avocado may darken slightly over time.
Tips for Perfect Avocado Deviled Eggs
Use ripe avocados for the creamiest texture. To prevent the avocado from browning, mix it with lime or lemon juice immediately after peeling. For an extra-fancy presentation, pipe the filling into the egg whites using a star-tip piping bag.
These Avocado Deviled Eggs are a delightful mix of creamy, tangy, and savoury flavours. They're easy to make and sure to impress at any gathering!
