Ingredients

  • 3 ripe bananas, mashed (about 1 cup)
  • 2 large eggs, lightly beaten
  • 60ml (1/4 cup) honey or pure maple syrup
  • 60ml (1/4 cup) melted coconut oil (or another light oil)
  • 1 teaspoon vanilla extract
  • 120g (1 cup) whole wheat flour (or a mix of whole wheat and all-purpose)
  • 80g (1 cup) rolled oats (quick-cooking or old-fashioned)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 30g (1/4 cup) chopped nuts or chocolate chips (optional)

Instructions

1. Preheat and Prepare

Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or lightly coat it with cooking spray.

2. Mash Bananas and Combine Wet Ingredients

In a large bowl, thoroughly mash the ripe bananas. Add the eggs, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir everything together until well incorporated.
