Mixed Berry Ice Cream Soda – A super refreshing soda on your hands.
INGREDIENTS:
- 1 cup Strawberries, chopped
- 1 cup Blackberries
- ¾ cup Sugar
- 1 cup Raspberries
- 4 Tablespoons Fresh Lemon Juice
- Vanilla Ice Cream
- Sparkling Water or Lemon Lime Soda
INSTRUCTIONS:
- Place berries, sugar and lemon juice in a food processor or blender. Process until smooth. Strain through a fine-mesh sieve, discard solids. Place in a jar or small pitcher and chill until ready to use.
Serving the Mixed Berry Ice Cream Soda:
For a standard pint size jar, measure in a small scoop of ice cream and 2 Tablespoons of mixed berry syrup. Stir together. Fill about 1½ cups of sparkling water or soda and add 2 scoops of ice cream. Serve immediately.
*You can also use this syrup to make an Italian soda – sparkling water + syrup + 1 Tablespoon Half & Half served over ice.
*You can use fresh or frozen and thawed fruit to make the syrup.
