  • 1 pound of fresh salmon, skin removed and cut into small pieces
  • 8 ounces of uncooked penne pasta
  • 3 tablespoons of butter
  • 1 medium onion, chopped
  • 8 ounces of heavy cream
  • 3/4 cup of grated Parmesan Reggiano
  • 1/4 cup of chopped parsley
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package directions.

  2. While the pasta is cooking, melt the butter in a large skillet over medium heat.

  3. Add the chopped onion and sauté for 4-5 minutes until softened.

  4. Add the salmon to the skillet and continue cooking for another 5-7 minutes, stirring occasionally and flaking the salmon as it cooks.

  5. Pour in the heavy cream, salt and pepper to taste, and stir until well combined. Turn off the heat.

  6. Drain the pasta and add it to the skillet with the salmon and cream sauce. Toss well to coat the pasta with the sauce.

  7. Add the grated Parmesan Reggiano and chopped parsley to the skillet, and mix until well combined.

  8. Sprinkle with more cheese and parsley before serving.
