Ingredients
- 2 medium sweet potatoes, peeled and diced into small cubes
- 1 tablespoon olive oil (or other cooking oil)
- 1 small onion, chopped
- 1 bell pepper, chopped (any colour)
- 1 teaspoon smoked paprika (optional)
- Salt and black pepper, to taste
- 2–4 eggs (depending on how many servings you want)
- Pinch of chilli flakes or your favourite herbs (optional for extra flavour)
Optional Add-Ins
- Sliced mushrooms
- Spinach or kale leaves, added towards the end
- Crumbled feta or grated cheese on top
- Sliced avocado for garnish
Instructions
1. Prepare and Roast the Sweet Potatoes
- Preheat your oven to 200°C (400°F).
- Place the diced sweet potatoes on a baking tray.
- Drizzle with 1/2 tablespoon of olive oil, then season with a pinch of salt and pepper.
- Roast for 15–20 minutes, or until the sweet potatoes are partially cooked and starting to brown at the edges.
2. Sauté the Onions and Peppers
- Meanwhile, heat the remaining 1/2 tablespoon of oil in a frying pan or skillet over medium heat.
- Add the chopped onion and bell pepper. Cook for 4–5 minutes, stirring occasionally, until the onions soften and the peppers begin to char lightly.
- Season with a little salt, pepper, and smoked paprika if you like a smoky flavour.
3. Combine Sweet Potatoes and Vegetables
- Once the sweet potatoes have partially roasted, remove them from the oven.
- Add them to the frying pan with the onions and peppers. Stir to distribute the seasonings evenly.
- Cook everything together for another 5–7 minutes, or until the sweet potatoes are fully cooked and golden.
4. Create Wells for the Eggs
- Using a spoon or spatula, make small wells (indentations) in the sweet potato mixture for each egg.
- Crack an egg into each well carefully. Season the eggs with a pinch of salt and pepper, or any desired herbs.
5. Cook the Eggs
- Reduce the heat to low and cover the pan with a lid.
- Allow the eggs to cook until the whites are set but the yolks are still runny, usually about 3–5 minutes.
- For firmer yolks, cook a bit longer.
6. Serve and Garnish
- Remove the pan from the heat.
- Sprinkle with chilli flakes, fresh herbs, or cheese if desired.
- Serve immediately, and consider adding sliced avocado or a spoonful of salsa on top for extra flavour.
Tips for a Delicious Sweet Potato Hash
- Cut the sweet potatoes into small, uniform cubes for faster, more even cooking.
- If you prefer crispy edges, cook the sweet potatoes a bit longer or finish them under the grill for a few minutes.
- Adjust the spice level by adding hot sauce or extra chilli flakes.
- Make it a one-pan dish by transferring the pan to the oven for baking the eggs if the skillet is oven-safe.
Enjoy this Healthy Sweet Potato Hash with Eggs for a hearty breakfast or a nutritious weeknight dinner. The mix of sweet potatoes, savoury vegetables, and runny yolks delivers comforting warmth and a burst of satisfying flavours in every bite.
