Ingredients

  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 tablespoon olive oil (or other cooking oil)
  • 1 small onion, chopped
  • 1 bell pepper, chopped (any colour)
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • 2–4 eggs (depending on how many servings you want)
  • Pinch of chilli flakes or your favourite herbs (optional for extra flavour)

Instructions

1. Prepare and Roast the Sweet Potatoes

  1. Preheat your oven to 200°C (400°F).
  2. Place the diced sweet potatoes on a baking tray.
  3. Drizzle with 1/2 tablespoon of olive oil, then season with a pinch of salt and pepper.

  3. Cook everything together for another 5–7 minutes, or until the sweet potatoes are fully cooked and golden.

  1. Using a spoon or spatula, make small wells (indentations) in the sweet potato mixture for each egg.
  2. Crack an egg into each well carefully. Season the eggs with a pinch of salt and pepper, or any desired herbs.

5. Cook the Eggs

  1. Reduce the heat to low and cover the pan with a lid.
  2. Allow the eggs to cook until the whites are set but the yolks are still runny, usually about 3–5 minutes.
