Ingredients

Tuna and Marinade

  • 250g sushi-grade tuna, diced into small cubes
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon sriracha (optional, for extra spice)
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon sesame seeds

Bowl Base

  • 2 cups cooked sushi rice (or brown rice for a healthier option)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Pinch of salt

Toppings

  • 1 avocado, diced
  • 1/2 cup cucumber, sliced or julienned
  • 1/4 cup edamame, cooked and shelled
  • 1/4 cup shredded carrots
  • 2 tablespoons scallions, thinly sliced
  • 1 tablespoon sesame seeds
  • Seaweed salad (optional)

Spicy Mayo Sauce

  • 2 tablespoons mayonnaise (vegan or regular)
  • 1 teaspoon sriracha
  • 1/2 teaspoon lime juice

Instructions

Prepare the Rice

  1. Cook the rice according to the package instructions.
  2. Once cooked, combine the rice vinegar, sugar, and salt in a small bowl. Stir until dissolved and fold into the warm rice. Let it cool slightly before assembling the bowls.

Marinate the Tuna

  1. In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, sriracha, grated ginger, and sesame seeds.
  2. Add the diced tuna to the marinade and gently toss to coat. Cover and refrigerate for at least 10–15 minutes to allow the flavours to meld.

Make the Spicy Mayo Sauce

  1. In a small bowl, mix the mayonnaise, sriracha, and lime juice until smooth. Adjust the sriracha to taste for desired spiciness.

Assemble the Bowl

  1. Divide the cooked rice between two bowls as the base.
  2. Arrange the marinated tuna on top of the rice.
  3. Add the toppings: diced avocado, cucumber slices, edamame, shredded carrots, and scallions.
  4. Drizzle the spicy mayo sauce over the bowl. Sprinkle sesame seeds on top for garnish.

Serve
